Only sour beer | The Rare Barrel will focus production entirely on sour beer. There is a universe to explore within this style of beer.
Aging in oak barrels | All of our sour beers will mature in oak barrels.
Patience | While traditional ales take about 2-4 weeks to produce, The Rare Barrel’s sour ales can take up to one year to fully mature. Some special barrels will mature several years.
Limits? Nope. | We look forward to exploring the entire known (and unknown) spectrum of sour beers with a variety of souring microorganisms, wild yeasts, spices, and fruits.
